Our flagship. Five years in ex-bourbon American oak, matured in a warehouse where the Atlantic air does what it does without being asked. The result is a whiskey with vanilla warmth at its core and a finish that carries something cooler — sea salt, dry grass, a hint of green apple. This is where we started, and it still tells the truest story of what we're trying to do here in Halifax.

Oloroso Sherry Cask
Eight years is a long time to wait for something. We think it was worth it. The Drumlin spent its maturation in oloroso sherry casks, drawing in dried fig, dark chocolate, and a low, slow sweetness that builds rather than announces itself. The maritime air pulls back against the richness — there's a tension there that Andrew, Matt, and Richard consider their favourite thing about this particular bottle.

French Oak & Ex-Bourbon Finish
A decade in Halifax weather leaves a mark. Harbour Edge opens with toasted oak and beeswax, moves through a mid-palate of stone fruit and warm spice, and finishes long and dry — cedar, a flicker of peat, something the three of us argue about every time we taste it. Bottled at 50% to keep the texture honest. This one rewards those who take their time with it.
